Standard Rolls

  • 2 cups scalded milk
  • 4 tablespoons butter
  • 2 tablespoons sugar
  • 5 cups flour
  • 2 teaspoons salt
  • 1 tablespoon yeast dissolved in 1/4 cup warm water
  1. Scald milk with butter, sugar and salt.
  2. When lukewarm add yeast and 3 cups flour.
  3. Beat in mixer 2-3 minutes on highest speed.
  4. Set bowl covered in unheated oven until double.
  5. Punch down mixture
  6. Mix in 1 or 2 beaten eggs
  7. Add flour and turn onto board
  8. Knead.
  9. Let rise until double in bulk.
  10. Turn out.
  11. Let rest 10 minutes.
  12. Form into balls.
  13. Fill 9-inch round pans or tins. Brush with melted butter and let rise.
  14. Bake at 425 degrees, 12-15 minutes.
  15. Serves 30-36.
