Spinach Balls


  • 1 (10 oz) pkg chopped spinach
  • 1/4 cup butter
  • 2 eggs
  • 1 1/2 cup stuffing mix
  • 1/2 cup shredded Cheddar cheese
  • 2 cups grated Parmesan cheese
  • 1/8 tsp. garlic powder

1. Defrost spinach and drain thoroughtly
2. Melt butter, set aside
3. In medium bowl, beat eggs slightly
4. Stir in remaining ingredients, adding melted butter last
5. Shape by spoonfuls into 24 balls
6. Arrange in 12 x 8 inch baking dish
7. Bake at 325 degrees for 20 minutes
