- 1 small potato, peeled and cooked
- confectioner's sugar
- peanut butter
- Mash the potato in a 1 quart bowl.
- Add confectioner's sugar until mixture is of the consistency of pie dough.
- Roll dough out on waxed paper to the thickness of pie dough.
- Shape into a rectangle.
- Spread with thin layer of peanut butter.
- Roll up from one long side and then cut slices 1/4" thick.
- They're ready to eat
