Pepper Nuts

(Mennonite Treat) Makes 9 quarts of pepper nut... A great gift for all your friends! A very good family activity... set aside lots of time for the rolling. - from Helen & Jim Reusser

Boil 15 minutes:

• 1 quart corn syrup
• 3 cups white sugar
• 1 1/2 cup sweet milk
• 1 cup lard (generous)
• 1 or 2 tsp. cardamom
• 1 1/2 tsp. soda
• 1 1/2 tsp. cinnamon
• 1 tsp. nutmeg
• 1 tsp. cloves
• 1 tsp. anise extract
• 1 tsp. pepper

Let cool, add:

• 1 tsp. lemon extract
• 1 tsp. vanilla extract
• 1 tsp. almond extract
• 2 tbs. baking powder
• Add enough flour to make a stiff dough (about 7 lbs.)

Let stand over night. Add more flour if necessary. Roll into narrow rolls about 1/4 inch across. Cut in pieces 1/4 to 1/2 inch. Roll into balls. Bake 375 degrees F. on greased cookie sheets.
