Individual Russian Paskhas

  • 1 pint large curd creamed cottage cheese
  • 1/2 pint plain yogurt
  • 1 1/2 teaspoons vanilla
  • 1/2 cup sugar
  • 2 teaspoons grated lemon peel
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons plain gelatin
  • 1/4 cup water
  • 1/2 cup diced almonds, roasted
  • 1/4 cup mixed diced dried fruits (apricots, prunes, etc.)

  1. In blender, combine cottage cheese, yogurt, vanilla, sugar, lemon peel and juice
  2. Blend until smooth
  3. In saucepan, combine gelatin and water
  4. Stir over low heat until dissolved
  5. Stir gelatin mixture, almonds and fruit into mixture in blender (don't whirl!)
  6. Turn into 5 individual molds (6 ounce)
  7. Chill until firm
  8. Invert into stemmed glasses to serve
  9. Makes 5 servings
